Why are some plants poisonous?
Most plants are inedible because they're actually poisonous, plants supposedly evolved like this to avoid being eaten, which means plants don't want to be eaten. It all makes sense, but then why are some plants edible and meant to be eaten? A carrot, for example can be eaten by humans, but when it is, the entire plant dies, unlike with fruits where a fruit can be eaten but the plant remains alive for many generations.
So I can understand why, evolutionarily speaking, fruits are mostly edible - because it helps disperse the seeds and they can be eaten without killing the entire plant - but what I do not understand is why some plants - like carrots or lettuce - allow themselves to be killed for food, it seems to go against the survival of the plant. What I also don't get is why all fruits are not edible, only some are. Some fruits are poisonous even though their consumption by animals would not harm the plant. So why are plants like this?

It all about reproductive success [of the species/genes] - not the survival of a specific individual. And, The answer lies in diversity. There are many successful strategies for increased reproductive success. Plants have a multitude of strategies for reproductive success including:
1) vegetative reproduction
2) Produce a fruit attractable to animals as food but with indigestible seed. Some seeds will only germinate after they have passed through a digestive tract.
3) Make the fruit/seed bitter or otherwise inedible. Dispersal can be by wind or hitching a ride on an animal (Cocklebur);
4) Make one or more of the plant products so desirable that another species will cultivate that species as a crop. Man cultivates desirable crops as do ants.
5) Produce a bazillion seeds that will carried away by birds or squirrels. Most will be eaten, but some will be stashed away and forgotten. These germinate and continue the species.

If one seed has more endosperm than another, which one would have a higher survival rate?
The question is a little tricky considering that the survival rate of a seed isn't dependent solely on the amount of endosperm available to the growing embryo. Other factors must be considered, namely, environment. I suppose the seed with the greater amount of endosperm would be able to stick it out longer if given unfavorable conditions. Since endosperm is merely food for the growing organism while it is developing, it should grow out of the seed and be able to produce its own food before it runs out of its stock supply.
